Picture this, it’s 5:30 PM on a Tuesday. You just walked in the door, kicked off your shoes, dropped your keys, and a little voice is already asking, “Mom, what’s for dinner?” The exhaustion is real, the mental load is heavy, and the last thing you want to do is spend an hour over a hot stove.
I’ve been there more times than I can count. As single moms, shoot moms period, “Private Chef” is one of the most demanding roles we carry. But that doesn’t mean we have to resort to cereal for dinner (althooooough, 🤔🤭).
Being a police officer who works long overnight shifts, I’m often not afforded the luxury of time. So over the years, I’ve perfected a short list of go-to meals that are fast, require minimal brainpower, and most importantly, my super picky eater will actually eat. These are my lifesavers, and I’m sharing them with you.
1. Deconstructed Taco Bowls
This is less of a recipe and more of a survival strategy. It’s my number one go-to because it’s fast, customizable, and kids love anything they can build themselves.
Why it’s a lifesaver: You’re only really cooking one thing: the ground beef. Everything else is just opening bags and containers. Minimal effort.
What You’ll Need:
• 1 lb ground turkey or beef
• 1 packet of taco seasoning
• Shredded lettuce
• Shredded cheddar cheese
• A can of black beans, rinsed (optional)
• Salsa
• Sour cream or plain Greek yogurt
• Tortilla chips or a side of rice
What You’ll Do:
1. Brown the ground meat in a skillet over medium-high heat. Drain the fat.
2. Add the taco seasoning and a little water (follow the packet instructions). Let it simmer for a few minutes until the sauce thickens.
3. While the meat is simmering, pull out all your toppings. Put them in separate bowls on the counter.
4. Serve it up! Let everyone build their own bowl with the meat, cheese, beans, lettuce, and salsa.
Solo Mom Pro-Tip: Make a double batch of the taco meat! Use the leftovers for quick quesadillas or nachos later in the week. Cook once, eat twice.
2. Speedy Rotisserie Chicken Quesadillas
Okay, so I have the perfect busy single mom’s secret weapon: the store-bought rotisserie chicken. It is the gift that keeps on giving, and on a Monday night, it’s the hero of this meal. These quesadillas are so fast, you’ll have dinner on the table before anyone has time to have a meltdown (you included).
Why it’s a lifesaver: There is virtually no “real” cooking involved. You are just assembling and heating. This is my go-to for when we walk in the door and have approximately 10 minutes of energy left in my tank. Plus, kids see a quesadilla and you get zero complaints. Zero.
What You’ll Need:
• 2 cups of shredded meat from a rotisserie chicken
• 4 large (burrito-sized) flour tortillas
• 2 cups shredded Mexican cheese blend (or Cheddar, or Monterey Jack)
• 1 tbsp of butter or neutral oil
• Optional add-ins: A can of black beans (rinsed), frozen corn (thawed), or finely diced bell peppers.
• For dipping: Salsa, sour cream, or guacamole.
What You’ll Do:
1. Prep Your Station: Get all your ingredients out and ready. If you’re using add-ins like beans or corn, have them in a small bowl. This makes assembly a breeze.
2. Heat the Pan: Place a large skillet or pan over medium heat and add your butter or oil.
3. Assemble: Lay one tortilla flat in the warm pan. Immediately sprinkle about ½ cup of cheese over the entire surface. On one half of the tortilla, layer about ½ cup of the shredded chicken and any other add-ins you’re using.
4. Fold and Press: Once the cheese starts to get melty (after about 1-2 minutes), use a spatula to fold the empty half of the tortilla over the filled half. Gently press down.
5. Get it Golden: Let it cook for another 2-3 minutes, until the bottom is golden brown and crispy. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.
6. Serve it Up: Slide it onto a cutting board, let it cool for a minute, then cut it into wedges with a pizza cutter. Repeat with the remaining tortillas and serve immediately with your favorite dips.
Solo Mom Pro-Tip: When you buy a rotisserie chicken, shred all the meat off the bone as soon as you get home. Store it in an airtight container in the fridge. You’ve just prepped the protein for 2-3 different meals for the week—quesadillas tonight, chicken and broccoli tomorrow, and chicken to throw on top of a salad the next day. It’s the ultimate cook-once, eat-thrice hack.
3. Savory “Chicken & Waffle” Sliders
I am the ultimate breakfast for dinner person! And my child likes chicken and he likes waffles, so BOOM!
Why it’s a lifesaver: You’re basically just heating up three things. It uses freezer and pantry staples, comes together in under 20 minutes, and has that perfect sweet-and-salty combo that both kids and adults love. So no, we’re not pulling out the flour and butter! Nope, we’re going frozen baby!
What You’ll Need:
• Frozen waffles
• A bag of your favorite frozen chicken nuggets or tenders
• Syrup or honey for drizzling
What You’ll Do:
1. Get your chicken nuggets or tenders cooking first, following the package instructions (the air fryer is your best friend here for maximum speed and crispiness!).
2. When the chicken has about 5 minutes left to cook, pop your frozen waffles into the toaster or broiler. You want them to be golden and crisp.
3. Time to assemble! Place a few hot chicken nuggets on one waffle.
4. Drizzle with a little bit of syrup, then top with the second waffle to make a slider or serve it open-faced.
Solo Mom Pro-Tip: Turn it into a “Waffle Bar” night. Toast up a bunch of waffles and put out bowls of toppings—the chicken nuggets, maybe a side of fruit. Letting your little one build their own waffle creation is a guaranteed way to make dinner fun and fight-free.
Being the only one in charge of dinner night after night is a tough gig. But having a few tricks up your sleeve makes all the difference. Give yourself grace, keep it simple, and remember that a fed kid and a sane mom is always a win.
